摘要

Abstract

Hawthorn fruits have significant health care value due to their rich polyphenols,flavonoids and vitamin C and other active ingredients,and are regarded as high-quality raw materials for health food.In this study,'Xinglong zirou'and'Qiujinxing'varieties with purple and pink flesh at maturity,respectively,were selected as test materials to determine the content of nutrient active substances and antioxidant capacity during the developmental stage of their fruits.The results showed that the anthocyanin and vitamin C content gradually increased with the development and maturity of the fruits,and the anthocyanin content of'Xinglong zirou'was significantly higher than that of'Qiujinxing',while the vitamin C content of'Qiujinxing'was significantly higher than that of'Xinglong zirou'.The total flavonoid content and FRAP value of the mature fruits of'Xinglong zirou'were significantly higher than those of'Qiujinxing',and the total phenolic content of the mature fruits of'Qiujinxing'was relatively high.In addition,the total flavonoid content of hawthorn fruits showed a significant positive correlation with DPPH-scavenging rate and a highly significant positive correlation with FRAP value;total phenol content showed a significant positive correlation with ABTS-scavenging rate and FRAP value,and it was hypothesized that the total phenol and total flavonoid were the key substances influencing the antioxidant capacity.
