硒对畜禽肉品质的调控作用及机制
Selenium:Regulation on Meat Quality of Livestock and Poultry and Mechanisms
摘要
Abstract
In livestock and poultry production,factors such as intensive rearing,nutrient deficiencies,harsh environments,and pathogen attacks can induce stress responses.This leads to lipid oxidation and protein degra-dation in muscles,consequently resulting in deteriorated meat quality.Dietary supplementation with selenium can improve redox status,enhance overall health,and mitigate the adverse effects of stress on meat quality.This paper reviewed the research progress on the effects of selenium on meat quality of livestock and poultry,and summarized the mechanism how selenium affected meat quality,in order to provide references for impro-ving meat quality via dietary selenium supplementation and in-depth research on its regulatory mechanisms.关键词
