摘要
Abstract
Garlic contains various nutrients such as carbohydrates,proteins,amino acids,and trace mineral el-ements,as well as bioactive substances such as sulfur compounds,polysaccharides,and polyphenols.There-fore,it has edible values such as enhancing aroma and flavor,promoting appetite,as well as medicinal values such as antioxidant,antibacterial,anti-inflammatory,and antiviral activities.This article reviews the main chemical components,physiological functions,and current applications of garlic and its derivatives in livestock and poultry production,and points out the key issues and future research directions in its industrial application,aiming to provide the references for improving the utilization value of garlic and promoting healthy breeding of livestock and poultry.关键词
