Diversity Analysis of Fungi in Fu Brick Tea and Taxonomic Identification of the Dominant"Golden fungus"

Abstract
As a kind of post-fermented teas,the"flowering"involved by fungi is crucial in its fermentation process of Fu brick tea and the species and quantity of dominant"Golden Flower"have a great impact on the"flowering"as well as on the taste and quality.In order to evaluate and analyze the species and taxonomic position of dominant fungi within the Fu brick teas,metagenomics was performed through high-throughput sequencing with the Illumina Miseq platform for three different samples respectively deriving from the Hunan(HNFZ),Shaanxi(SXFZ)and Zhejiang(ZJFZ)prefectures followed by traditional isolation and cultivation as well as molecular and morphological characterization.Analysis of the high-throughput sequencing data from the above three samples of Fu brick teas revealed a result that the dominant fungi belonged to Aspergillus.Analysis of the isolation and cultivation as well as the molecular and morphological characters,furthermore,indicated that the predominant"Golden Flower"of all three samples of Fu brick teas was Aspergillus cristatus.Our study confirmed that the quantity of"Golden Flower"in Fu brick teas from three areas was positively correlated with the tea taste to some extent.There exists,moreover,a mixed use of names for the teleomorphic and anamorphic of A.cristatus so far.According to the principle of"1F1N",i.e.one fungus,one name claimed by the International Code of Nomenclature for algae,fungi and plants,we suppose to choose A.cristatus as the only legal scientific name to represent this species.The original name of teleomorphic Eurotium cristatum thus should be discarded as a synonym of A.cristatus.The present study should provide scientific references useful for the future development and utilization of the"Golden Flower"fungi as well as its scientific nomenclature.关键词
