摘要

Abstract

This paper provides a systematic review of the research progress and application value of chemical constituents in celery and the extraction methods of its essential oil.In terms of chemical composition,it highlights the qualitative and quantitative studies on bioactive compounds in celery using modern analytical techniques such as high-performance liquid chromatography and gas chromatography-mass spectrometry.Regarding essential oil extraction,the principles,applications,and characteristics of commonly employed methods including steam distillation,solvent extraction,and supercritical CO2 fluid extraction are systematically discussed.This review aims to provide methodological references and a theoretical basis for the further application of celery in the development of functional foods and pharmaceuticals.
