Mechanisms and Structure-Activity Relationships of Edible Fungal Polysaccharides in the Modulation of Gut Microbiota for Health Promotion

Abstract
The gut microbiota(GM)is a critical determinant of host health,with its composition and function dictated largely by dietary components.Edible mushroom polysaccharides,as important dietary bioactive compounds,have gained significant research interest due to their broad physiological activities and unique"microbiota-targeting"properties.This review systematically summarizes current understanding of the health-promoting effects of edible mushroom polysaccharides,which act as prebiotics by fostering the proliferation of beneficial bacteria,suppressing the colonization of pathogens,modulating GM diversity,and regulating the production of microbial metabolites including short-chain fatty acids.Furthermore,we discuss the specific mechanisms through which edible mushroom polysaccharides intervene in chronic diseases,such as obesity,metabolic disorders,inflammatory bowel disease,and liver diseases-via GM modulation.This review aims to provide theoretical insights into the crosstalk between edible mushroom polysaccharides and the GM,thereby offering a scientific basis for developing functional foods and nutritional interventions for disease prevention and management.关键词
