肉鸡生产链食源性细菌污染情况及沙门氏菌耐药性分析
Analysis of foodborne bacterial contamination and Salmonella resistance in the broiler production chain

Abstract
This study was aimed at understanding the main sources of foodborne bacterial contamination and Salmonella resis-tance in the circulation process of a broiler production enterprise in Jiamusi City,China,to provide a scientific basis for preventing foodborne diseases.Samples were collected from various production stages of a broiler chicken enterprise in Jiamusi City from 2022 to 2024,and Salmonella,Listeria monocytogenes,and Campylobacter were quantified.The dominant serotypes and drug sensitivity re-sults of Salmonella were detected.Among 415 samples collected from 2022 to 2024,272 positive strains(207 samples)were de-tected,with a total detection rate of 49.88%(207/415),including 43.13%(179/415)Salmonella,8.92%(37/415)Listeria monocyto-genes,and 13.49%(56/415)Campylobacter.The detection rate of Salmonella in the breeding process was 27.17%(25/92).In the slaughter process,the detection rate of Salmonella was 56.20%(154/274),that of Listeria monocytogenes was 13.50%(37/274),and that of Campylobacter was 20.44%(56/274).The average values of quantitative detection for single increase,curved bacteria,and Sal-monella in the slaughter process were 139.5 CFU/g,59.29 CFU/g,and 1.49 MPN/g.The predominant serotype of Salmonella was C3 group Kentucky Salmonella.Four serotypes of Salmonella were identified.The total resistance rate of 141 Salmonella strains was 99.29%,thus resulting in 66 different resistance profiles.The detection rates of pathogenic bacteria in the broiler breeding process and particularly the slaughtering processes were relatively high.The multidrug resistance status in Salmonella was serious and included a complex spectrum of resistance.Therefore,hygiene management and antibiotic use management must be strengthened in the produc-tion and circulation process of broiler chickens.关键词
