Research progress on the intramuscular fat deposition mechanism in different cattle breeds

Abstract
With the optimization and upgrading of consumption levels,consumers are increasingly demanding higher quality in beef products.Intramuscular fat(IMF),as an important indicator for evaluating the quality of livestock meat,significantly influences beef tenderness and flavor.Meanwhile,the IMF content in beef cattle is affected by multiple factors,including breed,sex,feeding management,and nutritional composition.Advances in high-throughput sequencing and molecular biology have enabled the identification of candidate genes and genetic variants associated with IMF through integrated omics approaches.These developments have facilitated a systematic analysis of the molecular regulatory mechanisms underlying IMF deposition,thereby providing a theoretical foundation for improving beef quality and guiding breeding programs.Based on the origin of beef cattle breeds,this paper classifies units as Chinese local breeds,Chinese cultivated breeds,and Chinese introduced breeds.Focusing on IMF traits,we discuss influencing factors,candidate genetic markers,and molecular mechanisms,aiming to elucidate the molecular basis of IMF deposition and offer theoretical support for genetic improvement and innovative utilization of beef quality.关键词
