云南临沧地区5种澳洲坚果主要营养成分及生物活性物质测定分析
Analysis of the main nutrient components and bioactive substances of five macadamia varieties in Lincang,Yunnan Province

Abstract
Clarifying the main components and active substances of Macadamia integrifolia varieties A4,A16,344,788,and Own Choice(O.C)planted in Lincang area,Yunnan Province are helpful to provide a scientific basis for their quality evaluation,development and utilization.In this study,fat content was quantified using the Soxhlet extraction method.Protein content was de-termined via the Kjeldahl method.Total sugar content was measured by phenol-sulfuric acid colorimetry.Moisture content was as-sessed using the direct drying method.Ash content was determined by incineration(burning method).Crude fiber content was an-alyzed using acid-base digestion.Polyphenol content was quantified using Folin-Ciocalteu colorimetry.Flavonoid content was measured by aluminum nitrate-sodium nitrite colorimetry.Sterol content was determined via gas chromatography-mass spectrome-try(GC-MS).The results showed that significant differences were observed in the main nutrient components and active compo-nents among these five varieties.The protein content ranged from 7.12% to 9.45%;crude fat content varied between 68.24%and 75.83%;total sugar content was measured between 4.62% and 6.37%;moisture content fell within 2.98% and 4.88%;ash content ranged from 1.12% to 2.05%;crude fiber content was between 2.62% and 4.15%.Regarding active substances:polyphenol content was between 5.13 and 8.72 mg/g,flavonoid content ranged from 2.89 to 4.56 mg/g,and sterol content was measured at 165.2-214.8 mg/100 g.In conclusion,significant differences were observed in the nutrient and active components among five Macadamia integrifolia cultivars from Lincang area.Specifically,O.C variety exhibited the highest protein and fla-vonoid contents,A16 had the highest fat contents,788 contained the highest soluble total sugar content,A4 showed the highest moisture content,and 344 had the highest contents of crude fiber,polyphenols and sterols.关键词
