遵辣1号挥发性物质综合评价分析
Comprehensive Evaluation and Analysis of Volatile Compounds in Zunla 1

Abstract
Flavor is a core factor determining product quality and market competitiveness.As a representative variety of characteristic chili pepper in Zunyi,Guizhou Province,Zunla 1 owes its unique flavor to its volatile compounds,which serve as the key material basis.To clarify the characteristics of volatile flavor compounds in Zunla 1,gas chromatography-mass spectrometry(GC-MS)was employed in this study for qualitative and quantitative analysis of its volatile components.Meanwhile,odor activity values(OAV)were used to screen key flavor-active compounds.The results showed that a total of 167 volatile compounds belonging to 12 categories were identified in Zunla 1,including terpenes,aldehydes,esters and alcohols.Among these compounds,those with relatively high contents included tribromomethane,ethanol,2-chloroethanol and limonene.OAV analysis indicated that compounds such as linalool,2,3-butanedione,myrcene and ethyl 2-methylbutyrate exhibited extremely high OAV values,which impart floral,creamy,rich aromatic and fruity notes to Zunla 1 respectively.The findings of this study reveal the material basis underlying the flavor of Zunla 1,providing a scientific reference for quality evaluation,processing and utilization,as well as industrialization and popularization of this variety.关键词
