药食同源藠头的本草考证、现代研究与产品开发技术的研究进展
Research progress on herbal textual research,modern studies,and product development technology of Allium chinense as a food and medicine homology product

Abstract
Allium chinense G.Don,historically documented as"xie"in classical Chinese herbal texts,boasts a 2,000-year history of dual use as both medicine and food.Ancient pharmacological records consistently refer to it by the name"xie,"and its traditional therapeutic properties align remarkably with modern pharmacological findings.This study conducts a systematic investigation across three dimensions—herbal textual research,modern scientific studies,and product development—focusing on the historical origins,nomenclature evolution,and clarification of taxonomic confusion with closely related species.Modern research has confirmed that Allium chinense G.Don contains bioactive components such as sulfur-containing compounds,steroidal saponins,and polysaccharides.Through synergistic interactions,these components exert multifaceted pharmacological effects,including antibacterial,hypolipidemic,antioxidant,and anti-tumor activities.At the industrial level,traditional pickling techniques have undergone modernization through innovations like low-salt fermentation and pure culture inoculation.Functional products have emerged in sectors such as health foods and traditional Chinese medicine preparations,while diverse conventional food categories,including baked goods and condiment sauces,have also been formed.Currently,the Allium chinense G.Don industry benefits from favorable policy,market,and technological opportunities.However,it still faces challenges including the absence of standardized regulations,insufficient public awareness,and low deep-processing rates.Looking forward,through deepening basic research,improving standardization systems,and strengthening technological innovation,Allium chinense G.Don holds significant potential to play a greater role in the comprehensive health industry.Its development can provide a replicable model for the development of food and medicine homology industry,with Allium chinense G.Don itself serving as an exemplary case.关键词
