摘要

Abstract

In order to solve the perishable problem of prunes,Casein(CN)and Carvacrol(Car)were used as raw materials to prepare oil-in-water Casein-carvacrol(CN-Car)compos-ite nanoemulsion by high-speed shearing technology,and the main rot-causing bacteria of prunes were identified by morphological and molecular biological methods,and the antibacte-rial mechanism of CN-Car nanoemulsion was studied.The results showed that the main rot-causing bacteria of Prunes mume were Mucor.SEM showed that CN-Car nano-emulsion a-chieved high antibacterial effect by destroying the mycelium structure and spore germination of Mucor.CN-Car nano-emulsion treatment significantly improved the storage quality of Prunes mume:within 30 days,the decay rate decreased by 28.5%,the hardness increased by 0.76 N,and the decomposition of soluble solids and the increase of relative conductivity were inhibited(P<0.05).The MDA content in the treatment group decreased by 11%compared with the control group.The detection results of antioxidant enzyme activity showed that the POD activity in treatment group was higher than that in CK group(558 U/g),and the PPO activity decreased to 91.10 U/g,which significantly delayed the damage of cell membrane system.The antioxidant defense system was activated,which increased the peak activity of CAT enzyme to 1.59 times that of the control group,and effectively eliminated free radicals.The results showed that CN-Car nano-emulsion delayed cell damage through direct bacterio-stasis and enhanced antioxidant capacity,which provided an efficient solution for the green preservation of prunes.
