蒙古斑点马肉品质及营养成分的初步研究
Comparison of Meat Quality and Nutrient Composition Between Mongolian Spotted Horse and Other Horse Breeds

Abstract
To clarify the meat quality and nutritional characteristics of Mongolian Spotted Horses and fill the gaps in relevant re-search,three adult Mongolian Spotted Horses aged 3-5 years were selected for the experiment.Immediately after slaughter,samples of the deltoid,longissimus dorsi,and gluteus medius muscles were collected to determine meat quality and nutritional components,with were then subsequent compared with multiple horse breeds domestically and internationally.The results showed that the L*,a*and b* values of Mongolian Spotted Horse meat were 33.29±1.38,21.46±0.90,and 6.86±0.49,respectively,with a shear force of(7.23±1.41)kg.The contents of moisture,fat,protein and ash were(70.58±1.50)%,(2.92±0.87)%,(20.48±0.96)%,and(2.30±0.59)%,respectively.Among the essential amino acids,lysine had the highest proportion[(7.01±0.20)%],followed by leucine[(6.82±0.20)%].As for the fatty acid composition,the content of C18:1n9c was the highest[(29.97±3.30)%].Among the macro-mineral elements,potassium had the highest content[(1.35±0.14)%],while the contents of micro-mineral elements such as magnesium,calcium,selenium and iron were also relatively high.Compared with domestic breeds such as the Kazakh horse,Ili horse,and Mongolian horse,as well as foreign breeds including the Burguete horse,Italian heavy horse,Galician Moun-tain horse,Jeju horse,etc.,the protein content of Mongolian Spotted Horse meat exceeded 20%,which was consistent with and at a high level among most domestic and foreign horse breeds,the fat content was only(2.92±0.87)%,lower than that of the Italian heavy horse(4.28%),Jeju horse and other breeds,but comparable to that of the Ili horse.The total proportion of essential amino acids was 30.66%,higher than that of the Ili horse and Galician Mountain horse;the content of C18:1n9c in unsaturated fatty acids reached(29.97±3.30)%,higher than that of the Galician Mountain horse.The calcium content was(362.81±57.53)mg/kg,high-er than that of the Jeju horse and Galician Mountain horse.The meat of Mongolian Spotted Horses is characterized by high protein and low fat content,a high proportion of essential amino acids and unsaturated fatty acids,and richness in calcium,thus demonstrat-ing high edible value.The findings of this study could provide basic data reference for evaluating the meat-producing development potential of Mongolian Spotted Horses.关键词
