Sustainable food consumption research:domestic and international research progress and framework construction

Abstract
Sustainable food consumption has emerged as a pivotal strategy for addressing major global challenges,including food security,social welfare,public health crises,and environmental degradation.It is increasingly recognized as an essential component of sustainable development,linking human well-being with ecological integrity,resource efficiency,and social equity.In the context of rapid economic growth,urbanization,and ongoing societal transformation,China has experienced a profound shift in food consumption patterns,moving from historical undernutrition and scarcity toward overconsumption,excessive caloric intake,and structural dietary imbalances.While this transition has substantially improved food availability,nutritional outcomes,and overall living standards,it has simultaneously intensified pressures on natural resources,ecosystems,and public health,creating a complex and interrelated set of challenges that demand comprehensive,systematic investigation and targeted policy intervention.Despite growing recognition of sustainable dietary practices,research in China remains relatively fragmented,with a notable absence of comprehensive analytical frameworks capable of guiding policy and practice amid rapidly evolving dietary behaviors,socioeconomic dynamics,and environmental pressures.A systematic review of both domestic and international studies provides critical theoretical and empirical insights,helping to identify emerging trends,methodological innovations,and persistent knowledge gaps that are essential for designing effective strategies to promote sustainable food consumption and mitigate negative social,economic,and ecological outcomes.Building on this foundation,the present paper offers an integrated review and analysis of the conceptual underpinnings,evolving research directions,and key thematic areas related to sustainable food consumption.It highlights the multifaceted challenges posed by China's current consumption patterns,emphasizing not only individual dietary behaviors but also their broader chain effects on public health,resource utilization,ecological sustainability,and socio-economic development.To address these complexities,we develop a tripartite analytical framework that integrates the dimensions of food,health,and environment,providing a holistic perspective for understanding the interactions among dietary patterns,nutritional outcomes,and ecological impacts.Furthermore,the study identifies key future research priorities,emphasizing the necessity of interdisciplinary collaboration,multi-scale modeling,inclusive stakeholder engagement,and coherent policy integration.By offering a comprehensive and systematic perspective,this work aims to strengthen research and policy development in China while simultaneously establishing a transferable framework that could inform sustainable dietary transitions in other developing countries.Ultimately,the study underscores the importance of aligning dietary practices with broader sustainability objectives,promoting pathways toward healthier populations,resilient ecosystems,and equitable social development,thereby contributing substantively to the global agenda of sustainable transformation in food systems.关键词
