斜带石斑鱼受精卵的营养成分分析
Nutritional composition of orange-spotted grouper(Epinephelus coioides)fertilized eggs

Abstract
The orange-spotted grouper(Epinephelus coioides)is an economically important marine fish widely cul-tured in tropical and subtropical regions.Under aquaculture conditions,this species exhibits multiple spawning events an-nually,generating a substantial surplus of fertilized eggs beyond hatchery requirements.To evaluate its potential for value-added utilization,this study systematically characterized the nutritional composition of fertilized eggs.Proximate analysis revealed that the fertilized eggs contained 90.15%moisture,4.06%protein,2.25%lipids,and 0.44%ash(wet weight basis).Amino acid annalysis results showed that the content of seven essential amino acids(tryptophan not determined)was 12.42 g/kg,accounting for 39.72%of the total amino acids(TAA).The umami amino acids(Glu,Asp,Gly,and Ala)accounted for 10.25 g/kg,and 32.78%of TAA.Eighteen fatty acids were detected,with unsatu-rated fatty acids comprising 59.98%of total fatty acids,exceeding saturated fatty acids(40.02%).Notably,docosa-hexaenoic acid(DHA)and eicosapentaenoic acid(EPA)accounted for 24.09%and 4.34%,respectively.The eggs al-so contained various vitamins(pantothenic acid,folate,vitamins B6,B12,D,and E)and essential minerals(Zn,Mg,K,Na,Ca,P,and Se).Cholesterol content was relatively low(82.2 mg/100 g).These findings demonstrate that fer-tilized eggs of E.coioides represent a rich source of high-quality protein,n-3 polyunsaturated fatty acids,and micronu-trients,suggesting promising potential for applications in functional foods,nutraceuticals,and high-value bioproducts.关键词
