摘要

Abstract

Crocins are a class of water-soluble carotenoids,and exhibit pharmacological activities such as anti-tumor,anti-inflammatory,anti-oxidative stree,and neuroprotective effects,demonstrating broad application prospects.However,their traditional plant extraction methods suffer from low yields and high costs,which limits its application.In recent years,microbial heterologous synthesis has emerged as a research hotspot owing to its short production cycle,low cost,and genetic manipulability.This paper summarizes the structural characteristics,pharmacological activities,and advances in microbial synthesis of crocins,with a focus on engineering strategies utilizing Escherichia coli and Saccharomyces cerevisiae.Future efforts should emphasize enzyme functional exploration and metabolic regulation of crocins to facilitate their application in pharmaceutical and food industries.
