酿酒葡萄'品丽珠'芽变早熟株系酚类物质特征分析
Analysis of Phenolic Characteristics of Early-Ripening Bud Mutant Strains of Wine Grape'Cabernet Franc'

Abstract
In order to select early-ripening wine grape varieties that can avoid early frost damage in the eastern foothills of the Helan Mountain Region of Ningxia and possess specific high-quality phenolic profiles,to address the problem of insufficient phenolic accumulation and limited quality caused by early frost harvesting in this region,and to elucidate the regulatory effects of bud mutation-induced veraison shifts on fruit quality and non-anthocyanin phenolic metabolism.This study took the red wine grape Cabernet Franc from the Helan Mountain Eastern Foot production area in Ningxia as experimental materials.Three bud sport strains(early-maturing,mid-early-maturing,and late-early-maturing)were screened,and differences in their fruit quality and non-anthocyanin phenolic compounds were systematically compared.The results showed that the early-maturing strain exhibited a'large berry and high phenolic content'phenotyp,the vertical and horizontal diameters of single berries increased by 22.9%and 17.5%,respectively,while the contents of total phenols,tannins,and anthocyanins surged by 158.2%,169.8%,and 60.9%,respectively.However,its cluster weight decreased by 37.7%.The mid-early-maturing strain showed a'heavy cluster and high sugar-acid content'trait,with cluster weight,sugar content,and acid content increasing by 18.7%,13.4%,and 57.1%,respectively.Bud sport induced specific reconstruction of phenolic metabolism,the contents of key monomers epicatechin gallate and resveratrol increasing by 89.2%and 57.6%,respectively,and myricetin content soaring by 159.7%.In contrast,the total content of phenolic acids,as well as the contents of rutin and protocatechuic acid,decreased by 19.2%,44.8%,and 48.1%,respectively.The total flavonol contents in the mid-early-maturing and late-early-maturing strains decreased by 25.9%and 34.4%,respectively,with the reduction in total phenolic compounds reaching 9.7%and 12.9%.In conclusion,The veraison shift driven by bud mutation has precisely regulated the allocation of phenolic metabolism,clarified the quality and phenolic characteristics of different early-ripening bud mutant strains,and provides a direct theoretical basis and material selection targets for the breeding of new early-frost-resistant,high-quality wine grape varieties and the development of functional wines in the eastern foothills of the Helan Mountain Region of Ningxia.关键词
