Research on Predicting Shelf Life of Raw Milk Based on the Association between Microorganisms and Active Substances

Abstract
To investigate the correlation between microbial proliferation and degradation of active substances in raw milk during storage,milk samples from 20 healthy cows were analyzed using an integrated rapid detection system for bacterial somatic cells to monitor microbial dynamics over 72 hours,while ELISA kits quantified the activities of lactoferrin(LF)and lactoperoxidase(LPO).Results showed that microbial growth significantly reduced milk freshness(P<0.05).LF activity began to decline after 32 hours,with average activity decreasing to 86%at 48 hours and 61%at 72 hours.LPO activity exhibited an initial increase followed by a decrease.Correlation analysis confirmed a significant positive relationship between microbial count and degradation rates of both active substances(r>0.8).This study reveals the time-dependent degradation patterns of bioactive components in raw milk,providing a theoretical basis for optimizing dairy preservation strategies and quality control.关键词
