Technical Challenges and Strategic Considerations for Cultured Meat from Perspective of Industrialization

Abstract
To implement an all-encompassing approach to food and ensure national protein supply security,cultured meat,which transforms the paradigm of meat production through biomanufacturing technology,has become a strategic frontier in the global food science and technology field.Currently,the global cultured meat industry has entered a critical race period for large-scale production and commercialization.China has achieved parallel progress in basic research and pilot-scale production,but still lags behind in regulatory system,cost control and industrial ecosystem construction.The latest domestic and international research progress and industrial practices were systematically reviewed,the innovative paradigm and application value of cultivated meat were elaborated,the core requirements for industrialization were clarified,and the latest development patterns globally were sorted out.Combined with the construction and production practice of pilot plants,focusing on key links such as seed cells,culture media,scale-up production,tissue construction,nutrition and safety evaluation,the technical bottlenecks and solutions in the industrialization process were analyzed.On this basis,based on the current industrial situation and future changes,forward strategic considerations were put for promoting the high-quality development of China's cultured meat industry,which could provide references for relevant technological breakthroughs,policy formulation and industrial layout.关键词
