电化学分析技术在粮油和果蔬检测中的研究进展
Research Progress in Electrochemical Analysis Technology for Detection of Grains,Oils,Fruits and Vegetables

Abstract
With the increasing global attention to food quality and safety issues,the development of efficient and accurate detection technologies is of significant importance for safeguarding consumer health and promoting high-quality agricultural development.Recently,electrochemical analysis technology has demonstrated remarkable advantages in food quality and safety detection through innovations in nanomaterial modification,biorecognition element integration and signal amplification strategies.The fundamental principles and common methods of electrochemical analysis were systematically summarized,with a focus on its recent research progress and applications in quality and safety detection for grains,oils,fruits and vegetables.The technology's prominent capabilities in highly sensitive detection of contaminants,analysis of nutritional components,and non-destructive quality evaluation were highlighted.Major challenges in practical applications were also discussed,including interference from complex matrices,sensor stability and standardization issues.Future development directions were outlined to provide a theoretical reference for further research and practical implementation of electrochemical analysis in food detection.关键词
