摘要

Abstract

[Objective]The influence rule of meteorological conditions in pepper quality formation at different key growth stages was investigated to provide a scientific basis for planning cultivation of pepper.[Method]5 quality indexes(capsaicin,dihydrocapsaicin,reducing sugar,crude fat and crude fiber)of Zunla 9 planted in 13 pepper main producing areas of Guizhou,Henan and Yunnan Provinces during 2021-2023 were determined,and then the correlations between 5 quality indexes and 9 meteorological factors(temperature,humidity,precipitation,sunshine duration,etc.)at three key growth stages of transplanting to budding,budding to flowering,and flowering to mature harvest were analyzed by using a correlation analysis method.[Result]The capsaicin content was positively correlated with average temperature(0.394*),mean daily maximum temperature(0.389*),sunshine duration(0.491*),effective accumulated temperature(0.600**)at budding to flowering stage,and average temperature(0.538**),mean daily maximum temperature(0.389*),mean daily minimum temperature(0.540**),effective accumulated temperature(0.450*)at flowering to mature harvest stage significantly or very significantly,but negatively correlated with mean relative humidity(-0.392*)at budding to flowering stage significantly.The dihydrocapsaicin content was positively correlated with sunshine duration(0.552**),average daily temperature range(0.528**)and effective accumulated temperature(0.385*)at budding to flowering stage significantly or very significantly.The reducing sugar content was positively correlated with sunshine duration(0.696**)and effective accumulated temperature(0.614**)at budding to flowering stage and positively correlated with sunshine duration(0.564**)and effective accumulated temperature(0.559**)at flowering to mature harvest stage very significantly.The reducing sugar content was negatively related to mean daily minimum temperature(-0.526**),mean relative humidity(-0.400*),precipitation(-0.589**)and effective accumulated temperature(-0.677**)at transplanting to budding stage significantly or very significantly,and negatively and significantly related to mean daily minimum temperature(-0.374*)at budding to flowering stage.The crude fat content was positively related to sunshine duration(0.538**)at transplanting to budding stage very significantly.The crude fiber content was positively related to mean daily minimum temperature(0.459*)and effective accumulated temperature(0.520**)at transplanting to budding stage and mean daily maximum temperature(0.391*)at budding to flowering stage significantly or very significantly.The crude fiber content was related to precipitation(-0.590**)and effective accumulated temperature(-0.451*)at budding to flowering stage significantly or very significantly.[Conclusion]At the early growth stage,the minimum temperature and effective accumulated temperature improve crude fiber formation,and sufficient sunshine prompt the formation of crude fat.At the middle and late growth stages,the synthesis of capsaicinoids is significantly promoted by the influence of high temperature enhance reducing sugar accumulation significantly,and the sufficient sunshine and effective accumulated temperature enhance reducing sugar accumulation significantly,while the precipitation and effective accumulated temperature in inhibit crude fiber formation significantly.
