摘要
Abstract
As a widely used and safe natural pigment,the light instability of gardenia natural pigment seri-ously restricts the shelf life and sensory quality of products,which is a key problem to be solved urgently in in-dustrial application.This paper reviews the photodegradation mechanism of gardenia natural pigment,and dis-cusses the mainstream modification strategies to improve its light stability,including microcapsule construc-tion,porous carrier adsorption and molecular inclusion technology,chemical modification methods such as mo-lecular structure modification and addition of light stabilizers,as well as biological modification methods based on enzymatic methods and metabolic regulation.The modification strategies for light stability of gardenia natu-ral pigment are also prospected,hoping to provide a reference for the development of high-stability gardenia pigment preparations.关键词
