Abstract
The application of aqueous two phase extraction technique in food and fermentation industries,which is a new technological field,has been paid much attention increasingly.The technology has some unique characteristics compared with the traditional extraction methods.In this paper,the history of the technology and Its application in food and fermentation have been reviewed.The principle,characteristics,industralization prospect and existing problem of the technology were discussed,in order to popularize and quicken its correct use in food and fermentation industries.关键词
