摘要

Abstract

Artificial intelligence technology electronic nose was widely used in fruit quality evaluation due to its non-destructive and repeatability, moreover, due to it can estimate fruit aroma objective, accuracy, fast and roundly. In this article, the working principle of electronic nose technology and commonly used pattern recognition technique were described, the application of electronic nose in fruit maturity monitoring, shelf life prediction, cultivars discrimination and hazard analysis were reviewed. Moreover, current problems of this technology were pointed out and its development tendency was proposed.
