Abstract
Inulin fructotransferase is an enzyme which hydrolyzes inulin into DFA III.In this paper, the screening of inulin fructotransferase-producing strains, fermentation of inulase Ⅱ, isolation and purification, enzymatic properties, physiologic functions of its enzymatic product (DFA Ⅲ) were reviewed.关键词
