摘要

Abstract

A brief overview was given of understanding the production of natural flavors and fragrances by bioconversion, ln the paper,the advantages in, perspectives for and basic principle of production of nature flavors and fragrances by bioconversion were put forward.The production of vanillin and 2- phenylethanol by bioconversion were illustrated to give a better understanding this topic.It is hoped that the paper can stimulate people' s interests in research and development of this field.
