Abstract

Polyrhachis vicina Roger was hydrolyzed by Alcalase 2.4L, papain, protamex,flavourzyme and pancreatin respectively. Six indexes including the scavenging activities of superoxide radical, DPPH · and hydroxyl radical, reducing power, Fe2+ chelating ability, inhibitory ability against oxidation of linoleic acid were used to evaluate antioxidant activity of enzymatic hydrolysates. The protease was optimized by the index such as degree of hydrolysis(DH) ,yield of protein and peptides content,as well as the antioxidant activity. The results showed that enzymatic hydrolysates had good in vitro antioxidative activity,which was positively correlated with the amount of peptide content. Among the enzymes, alcalase 2.4L showed highest hydrolytic and antioxidant ability. The influences of heat, ultrasonic treatment and homogenization on the hydrolytic ability and the antioxidant ability of the resultant hydrolysates were measured,and the results showed that homogenization had the greatest impact on enzymatic hydrolysates.
