Abstract
As a safe, efficient emulsifier, glycerol monostearate is widely used in food industry, especially in the production and processing of flour products. It can make flour food look and taste better, and is commonly used as quality improver of flour products. This article outlined the nature and classification of glycerol monostearate, and gave a comprehensive analysis of its influence on the stability of flour. In addition,this article took bread, cakes and noodles as examples,and summarized the application of glyceryl monostearate in the flour products,thus provided theoretical reference for further improvement of the flour products' quality.关键词
