摘要

Abstract

In vitro and in vivo detection methods of food antioxidant activity were summarized.The mechanism and application of detection methods such as DPPH·, ABTS, TBARS, FRAP and ORAC were introduced.The correlations and standardization of detection methods were discussed.This research would provide a reference of choosing antioxidant activities detection method.
