摘要

Abstract

Ultrafiltration device fitted with polyether sulfone membrane were used as crosslinking agent, developing a simple and economical protocol for separating ovotransferrin from egg white. The effects have been studied of trans-membrane pressure, stirrer speed,solution pH and dilution of raw materials on permeate flux. Results of the investigation showed that the best conditition of separating ovotransferrin from egg white using two-stage ultrafiltration technique were: trans membrane pressure 0. 15 MPa, chicken egg whitesolvent ratio 1∶10, stirring speed 125 r/min, pH of the solution is 7. Under those conditions, the purity of obtained ovotransferrin is 29.6%.
