Advances in the research and application of galactooligosaccharides
摘要
Abstract
In recent years, with the development of food additives and deeper knowledge of intestinal microbial, functional food research has achieved remarkably successful. Galactooligosaccharides are nondigestible oligosaccharides,which are prebiotics and acting as the growth - promoting substrates for bifidobacteria in human intestine. This article reviews the mechanism of Galactooligosaccharides synthesis and its physicochemical properties, physiological functions,the manufacturing process as well as its application in food industry. Its current research situation and prospects are also briefly introduced.关键词
