花生红衣低聚原花色素抗氧化性的研究

摘要
Abstract
The capacity of reduction, eliminated hydroxyl radical and nitrite ion, inhibitory effects on the oxidation of linoleic acid and scavenging capacity on superoxide anion were studied.The results showed that compared with VC,oligomcric proanthocyanidin(OPC) has stronger capacity on reduction capacity, eliminated hydroxyl radical and nitrite ion at the same concentration; The OPC also has strong inhibitory effects on the oxidation of linoleic acid.When reaches a certain concentration, it has strong scavenging capacity on superoxide anion which generated by pyrogallol.Thus, OPC was a good natural antioxidant..关键词
