Progress on Physiological Function and Preparation of Cereal Peptides
摘要
Abstract
Cereal polypeptides are the hydrolytes of cereal proteins. They possess a few physiological functions, including antioxidizing, resist-fatigue and adjusting immunity, falling blood pressure and cholesterol, adjusting fat metabolism, and inhibiting platelet aggregation, etc. There are broad prospects of cereal polypeptides for development in medicine, food, materials and animal breeding. The paper reviewed the research progress of functions of cereal polypeptides as well as their preparation.关键词
