Abstract
This paper reports the production technology of different kinds of maltose and maltitol. The applications in producing functional foods, candy, chocolate, fruit juice beverage and frozen foods show that as an important food additive and sweeter, maltose and maltitol have a broad application prospects in food industry.关键词
