摘要

Abstract

Epsilon -poly -L - lysine (ε -PL), which is now industrially produced by Streptomyces albulus, is a homo - poly amino acid polymerized by the amide bond between α - carboxyl and ε - amino groups. As a kind of preservative, ε - PL shows awide range of antimicrobial activity and high stability. ε - PL is a naturally occurring biomaterial that is water soluble, biodegradable, edible and non -toxic toward humans and the environment; thus, it and its derivatives have been of interest in the past few years for a broad range of industrial applications such as food, medicine,environment and electronics. ε - PL and its derivatives offer a wide range of unique applications such as food preservatives, emulsifying agent, dietary agent, biodegradable fibers, highly water absorbable hydrogels, drug carriers, anticancer agent enhancer, biochip coatings. This review article deals with the structures, properties, antimicrobiai mechanisms, microbial synthesis, and potential applications of poly - ε - lysine.
