Abstract
Ultrasound assisted extraction is widely applied in the extraction of food functional components because of its high efficient, time saving and simple operation. The research advance for the optimal of extraction conditions, the effect of ultrasound on the structure and function of extract were reviewed in detail in this paper,in order to provide some theoretical guidance for the further application of ultrasound assisted extraction in food industry.关键词
