摘要

Abstract

Electronic nose and electronic tongue have been widely used with the development of bionic technology and sensor technology.The structure,working principle and measure methods of electronic nose and electronic tongue were introduced.And their applications in flavor analysis, monitoring ripening or spoilage of dairy products, controlling the quality of raw milk were described.
