摘要

Abstract

The compound enzyme hydrolysis was employed to produce soluble Dietary Fiber(SDF) from Wheat Bran. Firstly, the optimal ratio of amylase to alkaline Protease to cellulase was studied, then the effects of various factors on the yield of SDF were determined. Lastly, based on the above results, the orthogonal trial was adopted to optimize the technological parameters using compound enzyme hydrolysis to obtain the higher yield of SDF. The results indicated that the mixing ratio of amylase to alkaline Protease to cellulase is 2:1:2, and that 4% enzyme dosage needs to be added in the solution (pH7) at 60℃ for 1.5h to obtain 18.40% SDF.
