腌制泥螺中亚硝酸盐的清除方法研究

摘要
Abstract
The nitrite remove rate of different dose of raw garlic homogenate,vitamin E,vitamin C and potassium sorbet were researched.The results showed that the clear effect of vitamin E was not good and unstable.Raw garlic homogenate optimal dose was 6%,vitamin E dose 0.15%,vitamin C dose for 0.04%,potassium sorbet of dose for 0.09 g/kg.The best additive was vitamin C dose 0.04%,with the highest remove rate by 94.51% in 16 days.关键词
