Preparation of cross-linked transglutaminase crystals and its enzymology characteristics
摘要
Abstract
Transglutaminase(MTG)crystals were cross-linked and the basic enzymology characteristics were studied.The results showed that,compared to the original enzyme,cross-linked MTG had better resistance to heat,acid and alkaline,metal ions(Fe3+,Zn2+ and Cu2+)and organic reagent.After storing for 15 days,the activity of the cross-linked MTG remained above 80%,which was much higher than that of the free MTG.关键词
