Abstract
The necessity of removing allergens in food was elaborated,and the food allergen and the mechanism of food allergy were introduced.The application of enzyme hydrolysis in the reduction of the allergens of food and the latest development was mainly summarized.And finally,some suggestions were put forward to the shortcomings emerged in the application of enzyme hydrolysis in the reduction of the allergens of food.关键词
