摘要
Abstract
Silkworm pupa was crushed and defatted by acetone, giving silkworm pupa powder. Then the powder was hydrolyzed with five proteases (Alkali protease, neutral protease, pepsin, papain, trypsin). Among the tested enzymes, pepsin was confirmed as an optimal enzyme preparation to prepare silkworm pupa polypeptide in terms of DPPH scavenging activity of hydrolysates. The enzymatic hydrolysis procedure was op timized using orthogonal array method and the corresponding product was subjected to further analysis of antioxidant activity, such as reducing power and O2, OH and DPPH·scavenging activities.关键词
