摘要
Abstract
The technical process of extraction of tea polyphenols (TP) from green tea by using cellulase was investigated.The results showed that the effect by adding cellulase into the extracted pomace of green tea was better.On this condition, the extraction rate could reach 14.17% . On basis of single factor and orthogonal experiments,the optimum conditions as follows:the amounts of cellulase was 0.20g,the pH of extracting media was 4.8,the enzymolysis temprature was 55℃,the enzymolysis time was 60min. Under the optimum conditions, the contents of TP from green tea could reach 18.38% by cellulase,which was 2.12 times than that by chemical method.关键词
