摘要

Abstract

Extraction methods of egg yolk oil were reviewed.Function principles and technological characteristics of all methods were analyzed and compared. It made conclusions that conventional methods of egg oil had substituted gradually by some new methods( enzymatic,supercritical fluid extraction with carbon dioxide and sub-critical extraction by propane),because these new methods had the characteristics of better selectivity,higher oil extraction rate, less pollution and easier operation. Applications of egg yolk oil on food heath, cosmetic and medicine were discussed.
