Abstract
The selection of liquor vessel was closely related to the wine quality during aging period. There were many different kinds of liquor vessels in wine production, including ceramic vessels, stainless steel tanks, wooden vessels, etc. These different kinds of vessels were closely related to the taste of wine. Ceramic vessel played an important role in the process of accelerating aging of spirituous liquor. Depending on principles of grading along with quality, ceramic vessel was selected for storing during the process of accelerating ageing of liquor, and stainless steel tankl was used in the latter period.关键词
