摘要

Abstract

Chitosan-ascorbic acid compound was prepared and its antioxidation was studied. The compound was prepared with chitosan and ascorbic acid,and the structure, solubility, stability and antioxidation were determined. The optimal technology was 1:6 of material ratio,25℃ of temperature and 120min of time, The compound prepared under this condition showed better solubility and hydroxyl free radical scavenging ability than chitosan,and better stability in the solution than ascorbic acid. Infrared spectrum exhibited that ascorbic acid bound with the amino group. The product improved the ability of materials ,which was good to the further application.
