Abstract
Methods of protein degradation were summaried,including acid hydrolysis,alkaline hydrolysis,enzymatic and ultrasound-assisted hydrolysis,and comparing the advantages and disadvantages of each method.Then methods of amino acid detection were summaried from the angle of detection,including chemical analysis,electrochemical analysis and spectrophotometry.关键词
