Abstract
Objective:To analyse and compare the effect of sodium metavanadate on the synthesis of isoflavones including daidzein and genistein in soybean sprouts.Method:Soybean seeds were germinated in sodium metavanadate solutions(NaVO3) with different concentrations(0,200,400,600,800,1000,1200,1400,1600mg/L NaVO3) for 6 days at 28℃.The V-enriched soybean sprouts were harvested on the sixth day,the isoflavones including daidzein and genistein were extracted with 95% alcohol,and the contents of daidzein and genistein were determined with HPLC.Result:Soybean seeds germinated in 200~600mg/L NaVO3 solutions for 6 days at 28℃ showed ahigher content of isoflavones including daidzein and genistein than those obtained in NaVO3 solutions with other concentration in the same germination donditions.Conclusion:The application of NaVO3 solutions at a concentration of 200~600mg/L and germination for 6 days at 28℃ may be suggested for the production of the V-enriched chickpea sprouts,when comprehensively considering the contents of daidzein and genistein in soybean sprout together with its growth conditions.关键词
