滇西北地区四种羊肚菌营养成分分析比较
Nutrient analysis of morel in northwest Yunnan Province
摘要
Abstract
M.angusticepes,M.esculenta,M.conica and M.umbrina Bound.in Northwest Yunnan Province were carried on the convention nutrient content,mineral quality and amino acid determination and the analysis.Finally results indicated that the difference between the four samples was little,the nutritional value of samples was high.And it contained abundant protein,dietary fiber,mineral nourishing element,which was low in sugar and fat.The protein of morel was the high quality protein.关键词
