Applications of fingerprint technology in fruit wine
摘要
Abstract
The application of fingerprint technology in fruit wine was reviewed.The technology could determine the odors and the non-volatile substances objectively,accurately, rapidly and safely.Gas chromatography(GC), high performance liquid chromatography (HPLC) and mass spectrometry (MS) analysis of the fruit wine were mainly introduced.At the same time,two new technology methods, comprehensive two-dimensional gas chromatography (GCxGC) and ultra performance liquid chromatography(UPLC) were introduced.The technology could establish a scientific and rational method to control and evaluate the quality of the fruit wine.关键词
